Turkey burgers aren’t always known for being the most flavorful thing on the menu. They can be bland, dry, and just plain boring. But, add some cheese and black beans to the mix and your boring days of bland turkey meat will be over!

What you need-

1lb ground turkey (we used 97/3 for a ‘’healthier’’ burger)
1c black beans rinsed
3/4c shredded cheddar
1/2c bread crumbs
1/2c white onion
1 clove garlic
Salt/pepper
Spices of your choosing to taste (we used red pepper flakes and chili powder)
1 egg white
1tblsp balsamic vinegar

What to do-

1- In a food processor pulse onion, 1/2c of the black beans, bread crumbs, and garlic.

2- In a large bowl add turkey, remaining black beans, cheese, above mixture, salt/pepper and spices. On top of everything add the egg white and balsamic vinegar. With your hands mix everything until combined.

3- Divide meat into 6 portions and form into patties.  Place burgers on a preheated grill/skillet/indoor grill and slightly flatten the tops with a spatula. Grill each patty until finished and meat is at 165 degrees Fahrenheit. (No need for a photo of that, as we are confident you know what burgers on a skillet look like.)

4-Add a slice of cheddar cheese on top and garnish with avocado, sour cream, and salsa!

Quinoa – the trendy little seed (yes, it is a seed and not a grain) that has literally hundreds of uses. Here at JMRE we are quite a fan of this super food that is packed full of protein, calcium, iron, and other vitamins. One of our favorite uses for it is quinoa veggie burgers. These tasty burgers are easy to make and perfect for using up all of those veggies that are about to go bad in the freezer. This is a great, casual weeknight dinner.

What you need:

1c Quinoa, cooked according to the package
1c baby bella mushrooms
½ of a medium white onion
2 garlic cloves
2 cups of mixed vegetables
1 C bread crumbs
3/4c cheddar cheese
Salt/Pepper
1tsp oregano
1tsp thyme
2 eggs
1tblsp olive oil

How to Prep:

-Cook quinoa according to the package and set aside to cool
- Add mushrooms, onion, mixed vegetables and garlic into a food processor and pulse until finely chopped
-In a large bowl add quinoa, veggie mixture, spices, cheese and lightly beaten eggs. Mix with your hands until everything is equally coated.
-Form patties into 3” rounds making sure to squeeze tightly to keep everything together. You may have to add a bit more breadcrumbs if the patties seem to be a bit too wet/falling apart.

-Add olive oil to a pan and heat on medium until shiny
-Add patties to the oil pressing on the tops lightly with a spatula to flatten
-Cook patties about 4 minutes on each side adding more oil if needed. They should look browned and crispy.

** Please note: we used veggies that we had in our fridge/freezer and were going bad. What is great about these burgers is that you can play around with whatever ingredients that you like. Red peppers, zucchini, black beans, and eggplant are some of our other favorite add ins!

Sweet Potato “Fries”
We call these “fries” because they are baked, not fried, and don’t tend to be crispy like a traditional fry.
What you need:
-2 large sweet potatoes
-1Tblsp Coconut oil melted
-Salt/pepper

-Keeping the skin on the potatoes, slice into ¼” rounds
-Place rounds into a bowl and toss with coconut oil
-Spray a heavy baking sheet with cooking spray
-Arrange sweet potatoes onto the baking sheet and sprinkle with salt and pepper
-Bake sweet potatoes in a 400 degree oven for 10 minutes and flip potatoes, bake for another 10 minutes
-Potatoes should be tender in the middle and browned on the outside

1) Edgemont Park

Edgemont Park sits in the center of town. In the Winter, this pond freezes over, and if the ice is thick enough, ice skating is permitted. There’s a new playground for the kids, and Edgemont School (across the park) is K-5.

2) Applegate Farm

Homemade ice cream since 1848; this farm is a history lesson in itself. In fact, the original farmhouse that saw many slaves to freedom, still stands on the property. Try flavors like Frozen Hot Chocolate, Maple Walnut, and much more.

3) Watchung Plaza

This “downtown” boasts its share of mom-&-pop shops. From a cozy breakfast place called The Bluestone Coffee Co., to deli’s, sushi, & bookstores; this section of town can keep you busy for an entire afternoon.

4) The Bellevue Theater

When you don’t want the crowds of the AMC, the Bellevue is a nice break from the norm. It’s surrounded by plenty of restaurants, like Veggie Heaven and Tinga, you could really make a date night of it.

5) The Welmont Theater

In 1922 this theater opened its doors for live entertainment. It then changed over to movies in 1929. In 2008, it went through a $3 million dollar renovation, and now showcases A-List, live acts like the ones you see featured on the sign.
